Oatmeal Raisin Cookies


YUMMY!! I love oatmeal raisin cookies and this here is another amazing recipe I'd love to share with you. I have to admit I've never made them before today. *hangs head in shame* I decided to make them as a surprise for my mom, she loves oatmeal raisin cookies!
Since this was my first time baking oatmeal raisin cookies, I was shocked at how dense the cookie batter was. I was afraid that the cookies would be dry and hard but they weren't at all. They were beautifully browned and moist! I loved them!



Oatmeal Raisin Cookies
Makes 36 cookies

1/2 cup plus 6 tbsp butter, softened
3/4 cup firmly packed brown sugar
1/2 cup granulated sugar
2 eggs
1 tsp vanilla
1 1/2 cups all-purpose flour
1 tsp baking soda
1 tsp cinnamon
1/2 tsp salt
3 cups oats, quick or old fashioned, uncooked
1 cup raisins

Heat oven to 350 degrees. Line cookie sheet with parchment paper and set aside.
In a large bowl,beat butter and sugars on medium speed with and electric mixer until creamy.
Add eggs and vanilla; beat well.
In a medium bowl, combine flour, baking soda, cinnamon and salt; add to the butter/sugar/egg mixture and mix well.
Add oats and raisins; mix VERY well. (At this point the dough is very dense so make sure all of the ingredients are mixed together well.)
Bake 10 mins or until light golden brown. Cool 1 min on cookie sheet; remove to wire rack. Cool completely. Store tightly covered.
