Panko Crusted Mozzarella Sticks

Farm Rich or any other frozen cheese sticks ain't got nothing on these! I LOVE mozzarella sticks. Anytime I'm out at a restaurant I order these as an appetizer. Ain't nothing like ooey gooey cheese sticks with warm marinara sauce to dunk them in. These seriously didn't last more than 5 minutes in my house....we were watching basketball so this was the perfect finger food to nom on!

Panko Crusted Mozzarella Sticks
Makes 24 sticks

12 pieces of mozzarella sticks (halved)
1/2 cup flour
2 eggs
3tbsp milk
2cups panko bread crumbs
1 tbsp dried parsley

Cut  the cheese sticks in half for  total of 24 pieces. Set aside.
Place flour in a shallow bowl. In another bowl whisk the eggs and milk until well blended. In a third bowl combine the panko crumbs and dried parsley together.
To assemble, roll the cheese stick in the flour then dip it in the egg/milk mixture.  Use your hands to cover the cheese in the panko/parsley mixture.
Gently remove and place on a cookie sheet .
Repeat these steps until all mozzarella sticks are coated on the cookie sheet.
Place the cookie sheet in the freezer for about 20-30 mins. This step ensures that the cheese sticks are frozen or "shocked"and that they won't melt when they hit the hot frying pan.
Heat 1 1/2 in of canola oil over medium heat until it is hot. (If your oil isn't hot enough your cheese sticks will end up super greasy.)
Fry for about one minute on each side or until golden brown.
Remove and drain on a paper towel lined plate.
Serve with warm marinara sauce for dipping. Enjoy!
