Stuffed Strawberries


Stuffed Strawberries......oh la la. The combination of the creamy cream cheese filling and the texture of the pecans give the strawberries such flavor and balance. I love strawberries and pecans and I really feel like this could be a healthy snack...granted you don't eat them all like I did. Hehehe!
I highly suggest trying to get strawberries from a farmers market or get them in season as they are much sweeter than the "watered down" ones from the grocery store.




Stuffed Strawberries


1lb strawberries
8oz cream cheese
1/4 cup powdered sugar
2 tsps vanilla extract
chopped pecans optional

Rinse strawberries and cut the bottom off so that the sit upright. Make a criss- cross slit in the strawberries and try to fan them open. Be careful not to break them. Set them aside.
In a mixing bowl, mix together the cream cheese, powdered sugar and vanilla extract until combined. Use a piping bag or a ziploc bag to fill your fruit. Sprinkle pecans on the top of your strawberries.
