Beer and Cheese Biscuits
Lately, I've been so lazy when it comes to cooking, baking and blogging. I've gotten complaints from my brother about not being in the kitchen whipping up my "new creations", so the other day I decided to make biscuits! These are made with dark stout beer and cheddar cheese a great combination. These biscuits would be perfect as a side dish for a game day meal. I ate mine with chicken wings it was amazing!!
Beer and Cheese Biscuits
Makes 2 dozen
4 1/2 cups all-purpose flour
4 tsp baking powder
1 tsp baking soda
1 1/2 tsp salt
1/2 cup scallions,chopped
3/4 cup cheddar cheese,grated
7 tbsp unsalted butter,melted
1(12oz.) bottle dark beer (I used Guinness)
1 tbsp milk
1/4 tsp paprika
Preheat oven to 350 degrees. In a bowl, stir together flour, baking powder, baking soda, and salt. Add scallions and cheddar cheese; mix well. Fold in butter and beer, mix until just combined.
Turn dough out onto lightly floured work surface; pat down to 1in disk. Use a 3in round cutter to cut biscuits. Gather scraps, pat down and cut remaining biscuits. Place biscuits on ungreased baking sheet.
Brush biscuits with milk; sprinkle with paprika. Bake for 25 mins until golden. Serve warm.

Panko Crusted Mozzarella Sticks
Farm Rich or any other frozen cheese sticks ain't got nothing on these! I LOVE mozzarella sticks. Anytime I'm out at a restaurant I order these as an appetizer. Ain't nothing like ooey gooey cheese sticks with warm marinara sauce to dunk them in. These seriously didn't last more than 5 minutes in my house....we were watching basketball so this was the perfect finger food to nom on!

Baked Spinach & Artichoke Dip
A few years ago I made low fat spinach dip for my family's Super Bowl party and it turned out to be a HIT! Everyone loved it and no one knew that it was "low fat". This year I decided to take it up a notch and make spinach artichoke dip (that wasn't low fat). I've made it a few times since the Super Bowl and I might even make it once a week just because I love it that much!!
This recipe differs from the original one but it's still GOOD!
