Guacamole....oh how I love thee! Avocado is known as one of the best anti aging super foods and it's amazingly delicious too. You can eat avocado for ANY meal of the day. I've seen my mom make this numerous times and on a night where I needed a quick/healthy snack I whipped this up.
Easy Guacamole
Serves 4
2 Hass avocado
1/4 small red onion, finely chopped
1/4 small tomato, diced
1/4 tsp jalapeno pepper, seeded and diced
1/2 lime
1/4 tsp fresh cilantro, chopped
salt and pepper to taste
Cut the avocados open and remove the seed. Take one of them and spoon it the entire avocado into a bowl mashing it into chunks with a fork or a masher. Take the other one and completely dice it then add it to the bowl.
Squeeze the juice from the 1/2 lime over the avocado mix. Add all of the other ingredients and mix. Mix until completely combined. Add salt and pepper to taste.
ENJOY!
**Guacamole is NOT something you want to make in advance. Avocados oxidize, meaning they turn brown....this would make your guacamole into a brown gooey mess.**
